Not certain that it is a dish regularly served to patients. Is it possible it was a chef's contest only. It would appear to be a contest on serving flatiron steak, as all the recipes centered on that.

Adventist Health Addresses Meat in Their Hospitals
Do you serve meat in your hospitals?

While the Seventh-day Adventist Church does promote a vegetarian diet as part of a healthy lifestyle, most of our hospitals do serve meat to patients. This is as it should be. A patient is an involuntary participant in a diet he did not choose, so to serve him nutritious meals, and that will be eaten, is necessary for optimizing good health.

For those patients who prefer vegetarian, as I do, I have been given the choice of meals from the hosptials in which I have been a patient. Choice is the word.
